To Stew Veal

Ingredients

Directions

Prepare

  1. Remove the bones from the veal without disfiguring the meat.

  2. Flatten the joint and season it with white pepper, salt, and lemon juice.

  3. Layer the sliced bacon, stuffing, and hard‑boiled eggs on the veal.

  4. Roll it up tightly and bind with kitchen twine.

  5. Dust the rolled veal with flour.

Brown and stew

  1. Rub the bottom of a large stew pan with butter and brown the veal on all sides.

  2. Once browned, add the water and stew slowly for 2 to 2.5 hours.

Finish and serve

  1. Before serving, pour off the gravy.

  2. If the gravy is not thick enough, brown a little butter and flour and add it.

  3. Season the gravy with cayenne, salt, and a squeeze of lemon.

  4. Skim the sauce.

  5. Pour the sauce over the meat before serving and garnish with lemon slices.

What each ingredient does

Veal
Forms the main body of the dish; slow stewing tenderises its connective tissue.
Bacon
Adds fat and savoury flavour that seeps into the surrounding meat and gravy.
Bread crumbs
Bulk for the stuffing, soaking up fat and juices to keep the filling moist.
Eggs
Bind the stuffing together and set firm when the rolled joint is cooked.
Suet
Adds fat to the stuffing, keeping it moist and rich during the long stew.

The step that matters

Stew slowly for 2 to 2.5 hours. A gentle simmer lets connective tissue slowly convert to gelatin, leaving the veal tender and juicy. A hard boil tightens the muscle fibres, toughening and drying the meat.

Swap the thyme

How well each one fits the dish's main ingredients (veal, egg, lemon, bread, parsley, pepper):
