What each ingredient does

Ox kidney
Forms the main body of the soup and provides its rich, meaty flavour.
Flour or oatmeal dust
Coats the kidney so it browns and helps thicken the soup liquid.
Butter or dripping
Fat for browning the kidney pieces, adding richness and flavour.
Onion
Adds sweetness and aromatic depth to the simmering broth.
Ketchup
Adds acidity and sweet tang to season the finished soup.

The step that matters

Skim well. Skimming removes foam and loose fat that rise during boiling. Removing them keeps the broth clear and stops it tasting greasy.
