Why it works: Carrot and celery match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 10,173 recipes. Both carry myristicin, which smells spice, warm. The science ↓
Tomato Soup
Ingredients
Directions
In a stew-pan, combine butter, ham, sliced onions, carrot, celery, and chopped tomatoes.
Cover the pan and shake the contents over medium heat for about 5 minutes.
Add stock, pepper, and salt; let simmer for 1.5 hours.
Strain the mixture through a fine sieve, discarding the skin and seeds.
Return the liquid to the saucepan and stir in the tapioca.
Bring to a boil, then add sugar and lemon juice; boil for 10 minutes.
Serve hot.
