To Scallop Oysters

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Remove gills from oysters and scald them in their own liquor.

  2. Butter some scallop shells or tins.

Assemble

  1. Strew a mixture of bread crumbs, pepper, and salt at the bottom of the shells.

  2. Add some oysters, then more crumbs, repeating until finished with crumbs.

  3. Moisten the entire mixture with the seasoned liquor from the scalded oysters.

  4. Top with thick pieces of butter.

Bake and serve

  1. Place the dish before the fire or in a 400°F (200°C) oven for 10 to 20 minutes, depending on the size of the shells.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main filling and their briny liquor, which seasons and moistens the dish.
Butter
Adds richness and fat, and melts over the top to moisten and brown the crumbs.
Bread crumbs
Absorb the oyster liquor and form a soft, binding layer between the oysters.

The step that matters

Scalding the oysters in their own liquor. Heating only until the oysters firm and their edges curl keeps them tender; overcooking toughens the protein and makes them rubbery before baking.
