Pigeon Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the birds

  1. Pick and clean the pigeons well.

  2. Cut off the heads and truss the birds by turning the wings on their backs, then cut them in halves.

  3. Place a piece of butter, pepper, and salt inside each half bird.

Assemble the pie

  1. Put the beefsteak in the bottom of a pie dish.

  2. Lay the pigeon halves on the beef, adding the gizzards, livers, and slices of hard-boiled eggs around them.

  3. Pour in the stock or water.

  4. Cover the dish and place the legs of the pigeons with the feet upwards in a hole made in the center of the pie crust.

Bake

  1. Bake for 1.5 hours at 350°F (175°C).

Egg and pepper barely smell alike, yet cooks put them together in 50,580 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pigeons
Provide the main meat, which becomes tender through long, moist cooking.
Beefsteak
Adds savory meaty flavor and releases juices that moisten the pie filling.
Butter
Adds richness and moisture to the pigeon halves as they cook.
Hard-boiled eggs
Add firm texture and mild richness to the filling.

The step that matters

Cover the dish and bake for the full time. Pigeon and beefsteak are firm meats that become tender only through slow, moist heat, which breaks down connective tissue into gelatin. Keeping the dish covered traps steam and juices. Lifting the cover or cutting the time short leaves the meat tough and the filling dry.
