What each ingredient does

Beefsteak
Provides the main meat, which becomes tender during the long, moist simmer.
Flour
Forms the structure of the stiff paste that becomes the crust.
Suet
Adds fat to the crust, giving it richness and a tender texture.
Baking powder
Releases gas when heated, helping the crust rise and lighten.
Turnips
Add body and mild sweetness to the stew as they soften and release juices.
Onions
Add savoury depth and aroma as they soften in the pan.

The step that matters

Cover the vegetables tightly with the crust. A tight seal traps steam inside the pan so the meat and vegetables cook in their own moisture. A loose crust lets steam escape, which can leave the meat dry and the gravy thin.

Swap the onion

How well each one fits the dish's main ingredients (carrot, pepper, turnip, flour):

  1. Parsnipfits better
  2. Leekfits better
  3. Beetrootfits better
  4. Onionthe original

Fit is the average pairing score against carrot, pepper, turnip, flour. Candidates are from the same food group and used in at least 100 recipes.
