What each ingredient does

Leg of mutton
Is the main cut that is cooked slowly in water until tender.
Turnips
Mashed with cream and butter to give a soft, creamy texture and mild sweetness.
Flour
Thickens the mashed turnips so they hold their egg shapes.
Cream
Adds moisture and richness, giving the mash a smooth, soft texture.
Butter
Adds fat and richness to the mashed turnips.
Carrots
Cooked in the broth and served as a sweet, colourful accompaniment.

The step that matters

Skim off any foam after the water boils. Foam rising from the surface carries impurities and proteins from the meat; removing it keeps the cooking liquid clearer and the gravy cleaner in flavour.
