Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the dish, becoming tender through slow, moist stewing.
Fat bacon
Larding adds fat and moisture that keep the lean veal from drying out during the long stew.
Onions
Flavour base that sweetens and deepens the gravy as they cook slowly in the liquid.
Veal or mutton broth
Moist cooking liquid that gently braises the veal and becomes the gravy for the glaze.
Lean ham or gammon
Adds savoury, salty flavour to the cooking liquid and the finished gravy.

The step that matters

Boil the gravy quickly until it thickens to a glaze. Rapid boiling reduces the thin stewing liquid by evaporation, concentrating its gelatin and flavour so it clings to the meat as a glaze. Boiling too gently leaves it watery and dull.

Swap the mace

How well each one fits the dish's main ingredients (veal, onion, carrot, ham):

  1. Celeryfits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against veal, onion, carrot, ham. Candidates are from the same food group and used in at least 100 recipes.
