Ingredients

Directions

The book says “a moderate oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Preheat the oven to 400°F (200°C).

  2. Cover the bottom of a pie dish with alternating slices of veal and ham.

  3. Season with chopped mushrooms, shallot, parsley, pepper, and salt.

  4. Add a little white sauce, stock, or water.

  5. Arrange the chicken pieces neatly on top and season again.

  6. Add the yolks of hard-boiled eggs and mash with more sauce.

Assemble and bake

  1. Cover with puff pastry, brush with beaten egg, and decorate the top.

  2. Bake for about 1 hour and 15 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Forms the main body of the filling and provides savoury meat flavour.
Puff pastry
Bakes into flaky, layered structure that encloses the filling.
Hard-boiled egg yolks
Mashed into the sauce to add richness and a creamy, thickened texture.
Ham
Adds salty, savoury flavour to the layers beneath the chicken.
Beaten egg
Brushed on the pastry, it promotes golden browning during baking.

The step that matters

Brushing the pastry with beaten egg. An even egg glaze helps the puff pastry brown evenly and develop a glossy finish. Uneven or heavy brushing can cause patchy colour and may glue the layers together, limiting rise.

Swap the parsley

How well each one fits the dish's main ingredients (chicken, veal, ham, mushroom, shallot, pepper, sauce):

  1. Capersfits about as well
  2. Thymefits about as well
  3. Tarragonfits about as well
  4. Parsleythe original

Fit is the average pairing score against chicken, veal, ham, mushroom, shallot, pepper, sauce. Candidates are from the same food group and used in at least 100 recipes.
