Welsh Beef

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Cure

  1. Rub the beef with powdered saltpetre and let it stand for 6 hours.

  2. Season the beef with pepper, salt, and pounded allspice.

  3. Place the beef in brine for 16 days, turning it frequently.

  4. Afterward, wash the beef well with the pickle.

Bake

  1. Put the beef in an earthen vessel and cover it with beef suet.

  2. Bake in a 300°F (150°C) oven until cooked through.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef suet
Covers the beef during baking, keeping the surface moist and rich.
Powdered saltpetre
Cures the meat, helping it keep its pink colour and firm texture.

The step that matters

Baking until cooked through. Beef cooked at 300°F needs time to reach a safe internal temperature throughout. Checking the centre of the thickest part with a thermometer, rather than judging by colour, prevents under- or overcooking.

Swap the allspice

How well each one fits the dish's main ingredients (beef, pepper):

  1. Rosemaryfits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. Allspicethe original

Fit is the average pairing score against beef, pepper. Candidates are from the same food group and used in at least 100 recipes.
