Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Walnuts
Provide the main body of flavour and colour once steeped in the vinegar.
Vinegar
Adds acidity, extracts flavour from the walnut pulp and helps preserve the sauce.
Shallots
Contribute a sharp, savoury aroma.
Cloves
Add a warm, pungent aroma.
Mace
Adds a warm, delicate spiced aroma.
Black pepper
Adds a sharp, pungent bite.

The step that matters

Letting the walnut pulp stand in vinegar for 3 to 4 days. Over several days the vinegar slowly draws flavour and colour out of the walnut pulp. Cutting this short leaves the sauce weak and under-extracted.

Swap the mace

How well each one fits the dish's main ingredients (walnut, vinegar, shallot, clove, pepper):

  1. Tarragonfits better
  2. Allspicefits better
  3. Thymefits better
  4. Macethe original

Fit is the average pairing score against walnut, vinegar, shallot, clove, pepper. Candidates are from the same food group and used in at least 100 recipes.
