Fore Quarter of Lamb

Ingredients

Directions

  1. Cut around the shoulder deeper than the skin.

  2. Pull the shoulder up with a fork to avoid removing too much meat from the ribs.

  3. Squeeze the lemon or orange over the shoulder.

  4. Season with pepper, salt, and add the pat of butter.

  5. Replace the shoulder and cover it, letting it rest for a minute.

  6. Remove the shoulder to avoid cluttering the dish.

  7. Cut off the breast-bones and separate the ribs, cutting them through the middle.

  8. Serve the preferred cuts with gravy.
