What each ingredient does

Raspberries
Provide the main fruit flavour, aroma and colour of the vinegar.
Distilled vinegar
Extracts the raspberry flavour and adds the sharp acidity that defines the finished vinegar.
Sugar
Adds sweetness that balances the acidity of the vinegar.

The step that matters

Boiling in the bain-marie. Heat the jar gently and keep it covered well with the cloth, so the mixture heats evenly and steam does not drip back into it, which would dilute the flavour.
