What each ingredient does

Chestnuts
Add body and a soft, starchy texture to the stuffing and, when rubbed down, thicken the sauce.
Suet
Adds fat that keeps the stuffing moist and rich as it cooks.
Anchovy
Adds savory depth that rounds out the flavor of the beef and sauce.
Bread
Soaks up juices and fat from the fried meat, giving a crisp, savory base to serve it on.
Pickled cucumbers
Add acidity that brightens the reduced gravy.
Rump of beef
Provides the main meat, which becomes tender through slow stewing or braising.

The step that matters

Reduce the gravy. Reducing concentrates the flavor and thickens the liquid by evaporating water. Cooking it too long can make it salty or overly intense, so taste as it reduces.
