Fat Livers and Gizzards

Ingredients

Directions

  1. Prepare the gizzards and let them cool.

  2. Lard the gizzards or slash them and fill the slashes with gratin.

  3. Lard the livers with truffle nails.

  4. Cover a flat dish with gratin and create a puff pastry border.

  5. Crisp the small wings in poultry fat and place one under each liver and gizzard alternately over the gratin.

  6. Roast them on a spit if desired.

  7. Prepare a tomato sauce and braise the liver and gizzards.

  8. Glaze them and dish the ragout, layering the side-bones and intermixing the livers and gizzards.
