To Roast Partridges

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Cover the breasts of the partridges with slices of lemon and then with bacon.

  3. Tightly cover with paper.

  4. Roast until ready, then remove the paper and froth the partridges.

  5. Serve with clear juice, allspice, and a little Seville orange juice.
