Sweet Sweetbread Pasty

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat your oven to 350°F (175°C).

  2. Line a dish with pasty dough.

  3. Cover the dough with veal or vegetable filling, seasoned sweet.

  4. Lay in collops of veal that have been beaten and rolled in white spices.

  5. If not very fat, place a thin slice of bacon over each collop.

  6. Cover with a slice of veal or lamb's sweetbread.

  7. Add more veal, then cover with artichoke bottoms, hard-boiled eggs, and meatballs.

  8. Top with minced apples, then sprinkle sugar and plumped currants over the top.

  9. Finish by covering with minced marrow or fresh butter.
