To Bake Fish

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Season the whole white fish and make incisions.

  3. Lard the fish with eel, oysters, parsley, and lemon peel.

  4. Stuff the fish with fish, veal, or vegetables.

  5. Place the fish in a baking dish with stock and white wine or butter.

  6. Baste the fish continually while baking.

  7. Once cooked, pour off the sauce and thicken it to taste.

  8. Add anchovy or other seasoning to the sauce.
