Ingredients

Directions

  1. Squeeze tomatoes to remove excess juice and place in a stone jar with butter.

  2. Cover tightly and place in the oven after baking bread; leave overnight.

  3. Rub through a fine sieve and add capsicum vinegar, garlic, salt, and ginger to taste.

  4. Store in small bottles to prevent spoilage.

  5. For another method, blanch and peel tomatoes, remove seeds, and press out juice.

  6. Cook over low heat, stirring constantly with a wooden spatula until dried.

  7. Pulp the tomatoes and add fresh capsicums, cayenne, ginger, and salt.

  8. Transfer to wide-mouthed bottles and cover with clarified suet.

  9. For a third method, add ox-heel jelly when tomatoes are nearly dried and stir until thickened.

  10. Roll and cut into squares or mold and dry in a cool oven.
