Why it works: Malt and sugar work together. They rank in the top 17% of all ingredient pairs, and cooks put them together in 325 recipes. Both carry beta-damascenone, which smells apple, rose. The science ↓
To Brew From Two JiusTieln of Malt a Quarter-hogshead of Strong Ale and a Quarter-hogshead of Table-beer
Ingredients
Directions
Mash
Mash the malt with 18 gallons of water at 182°F (83°C) and cover for 2.5 hours.
Draw off the mash into the underbade.
When the mash surface appears, sparge with 12 gallons of water at 190°F (88°C) until you have 24 gallons for the first copper.
Sparge the mash with another 20 gallons of water at 195°F (91°C) for the table-beer wort.
Cover the table-beer wort for a short time.
Boil the strong ale
Put the strong-ale wort into the copper with 1 pound of hops and boil for 45 minutes.
Add another 0.5 pounds of hops and boil for an additional 30 minutes.
Cool a portion of the wort to 60°F (16°C) and check the strength with a saccharometer.
Add sugar to reach a gravity of 115.
Draw off the wort.
Distribute into coolers.
Boil the table beer
Put the table-beer wort into the copper, ensuring enough is available.
Return the boiled hops to the copper and add another 0.5 pounds.
Boil the second wort for 2 hours.
Cool a portion to 60°F (16°C) and check its strength.
Add sugar to achieve a gravity of 40 to 45 as desired.
Draw off the wort.
Cool to 80°F (27°C).
Ferment with 1 English pint of yeast.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Malt
- Provides the sugars that yeast ferments, and sets the beer's body and strength.
- Hops
- Add bitterness that balances the malt sweetness and contribute aroma.
- Yeast
- Ferments the sugars in the wort into alcohol and carbon dioxide.
- Sugar
- Raises the fermentable sugar content, adjusting the final gravity and strength.
The step that matters
Cool the wort to 60°F (16°C) before checking strength. Hot wort gives inaccurate saccharometer readings and would kill or stress yeast if pitched too early. Checking gravity at the right temperature before adding sugar keeps the strength correct.
