Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Preheat the oven to 350°F (175°C).

  2. Season the pork joint with salt and pepper.

  3. Place the pork in a roasting pan and add a little water.

  4. Roast in the oven until the internal temperature reaches 145°F (63°C), about 1.5 to 2 hours.

  5. Let the pork rest for 10 minutes before slicing.
