  1. In a deep stewpan, combine the beef, onions, carrots, and bouillon.

  2. Set over high heat until the broth reduces, then lower the heat and simmer until it develops a rich color.

  3. Add water according to the amount of meat and continue cooking.

  4. Dredge the beef with flour, season with pepper and salt, and fry until browned.

  5. Stew the beef for six hours with a pint of water for each pound of meat and the fried onions.

  6. Strain the soup to remove fat, then thicken with butter and flour mixed smoothly.

  7. After 20 minutes, stir in soy sauce, sherry, and cayenne pepper before serving.
