What each ingredient does

Veal or mutton
Provides meat flavor and gelatin-rich connective tissue that gives the broth body during long simmering.
Rice
Releases starch into the liquid, helping thicken the broth slightly.

The step that matters

Skim off impurities after the boil. Foam and fine particles rising early can cloud the broth and add off flavors. Skimming while the liquid heats keeps the broth clear and clean-tasting.
