What each ingredient does

Cod
Forms the flaky main body of the dish, cooked gently until opaque and tender.
Veal gravy or broth
Provides the liquid base and savory body for the stewed sauce.
Fine bread crumbs
Thicken the sauce slightly and give it body as they soften in the liquid.
Arrow-root
Starch that thickens the sauce to a smooth, glossy consistency when heated.
Essence of anchovies
Adds concentrated savory, salty depth to the sauce.
White wine
Adds acidity and aroma that brighten the rich sauce.

The step that matters

Lift out the fish before serving and add the arrow-root carefully. Cod is delicate and breaks apart easily, so lifting it gently keeps the slices whole. Arrow-root must be mixed in smoothly before heating, since starch clumps if it is added to hot liquid without first being blended with a little liquid.

Swap the mace

How well each one fits the dish's main ingredients (fish, veal, bread, pepper, white wine, lemon):

  1. Parsleyfits better
  2. Marjoramfits better
  3. Thymefits better
  4. Macethe original

Fit is the average pairing score against fish, veal, bread, pepper, white wine, lemon. Candidates are from the same food group and used in at least 100 recipes.
