Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Vegetable marrow
Breaks down during stewing to give the sauce its body and smooth, pulpy texture.
Veal broth or pale gravy
Supplies the liquid and savoury depth in which the marrow softens and flavours the sauce.
Rich cream
Adds fat and a silky mouthfeel, rounding the sharpness of the stewed vegetable.
Mild onion
Contributes gentle aromatic sweetness that builds the sauce's base flavour.

The step that matters

Stewing the marrow gently. Gentle heat softens the marrow fully so it can be pressed through the sieve smoothly. Boiling hard can break the mixture unevenly and turn the flavour dull.
