Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mushrooms
Dried and powdered, they supply concentrated mushroom flavour to the sauce.
Strong veal gravy
Provides the savoury liquid base of the sauce.
Cream
Adds richness and body to the sauce.
Flour
Thickens the sauce as it is combined with the liquids.

The step that matters

Cork and seal the bottles immediately. Mushroom powder absorbs moisture from the air, which can cause clumping and spoilage, so it should be sealed right after filling.

Swap the mace

The recipe marks mace as optional. How well each one fits the dish's main ingredients (mushroom, veal, cream, flour):

  1. Nutmegfits better
  2. Turmericfits better
  3. Capersfits better
  4. Macethe original

Fit is the average pairing score against mushroom, veal, cream, flour. Candidates are from the same food group and used in at least 100 recipes.
