Beef Palates
Ingredients
Directions
Boil the beef palates until the skin can be easily removed.
Stew them in good veal broth until very tender.
Remove them from the broth and let them cool on a drainer.
Cut the palates into strips about ¼ inch wide.
Dress the strips using one of the macaroni dressing recipes from Chapters XVIII and XX.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
