Directions

Prepare the meat

  1. Remove the meat from the bones and slice it small, trimming off the brown edges.

Make the stock

  1. Stew the trimmings with the broken bones, onion, thyme, parsley, carrot, peppercorns, cloves, salt, and water.

  2. Reduce the mixture to just over ¾ pint, then strain and remove the fat.

Finish and serve

  1. Thicken the strained liquid with rice flour or arrow-root, adding salt and pepper if needed.

  2. Boil the mixture for a few minutes, then add the meat and heat it thoroughly.

  3. Optionally, slice boiled potatoes into the hash before serving.

What each ingredient does

Cold beef or mutton
Provides the meat that forms the body of the hash.
Rice flour or arrow-root
Thickens the strained liquid into a light sauce that coats the meat.
Bones
Release gelatin and flavour into the stock as they stew.
Onion
Adds savoury sweetness and aroma to the stock.
Carrot
Adds subtle sweetness and body to the stock.

The step that matters

Thicken the strained liquid. Starch must be fully heated in liquid to swell and thicken the sauce; adding it to a cool liquid or not boiling it leaves the sauce thin or floury-tasting.

Swap the clove
