Veal Goose

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Prepare the upper part of the flank of a loin of veal by removing the skin, leaving more than an inch of flesh attached.

  2. Make a stuffing with sage and onions, then roll the veal around the stuffing.

  3. Roast the veal in a preheated oven at 350°F (175°C) for one hour.

  4. Serve with brown gravy and apple sauce.
