Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Forcemeat
Adds a moist, savoury filling that keeps the lean bird juicy during stewing.
Fine sausage meat
Adds fat and richness, moistening the stuffing and the meat around it.
Thin slices of bacon
Adds fat that melts into the bird, adding flavour and moisture.
Veal broth
Provides the liquid that gently cooks the bird and becomes the gravy.
Carrots
Add sweetness and body to the braising liquid as it reduces.

The step that matters

Stew gently for 1 hour and 15 minutes to 1 hour and 30 minutes.. A gentle simmer cooks the bird through and keeps the meat tender. A hard boil toughens the proteins and can break the rolled bird apart.

Swap the mace

How well each one fits the dish's main ingredients (liver, meat, veal, chicken, carrot):

  1. Thymefits better
  2. Celeryfits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against liver, meat, veal, chicken, carrot. Candidates are from the same food group and used in at least 100 recipes.
