Ingredients

Directions

Prepare

  1. Prepare the partridges by sewing them up and trussing them securely.

Roast

  1. Roast the partridges on a vertical jack with the heads downwards, or tie them firmly to an ordinary spit.

  2. Roast for 30 to 40 minutes or until cooked through.

Braise and serve

  1. For a different method, flour the trussed partridges and brown them lightly in butter.

  2. Cover with rich brown gravy and simmer for 30 minutes, then add mushrooms and simmer for another 30 minutes.

  3. Alternatively, serve with a sauce thickened with butter, arrowroot, cayenne, and catsup or wine.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Partridges
Form the main protein that is roasted or braised until cooked through.
Mushrooms
Add moisture and savoury flavour to the brown gravy during simmering.
Butter
Adds richness and helps lightly brown the floured partridges.
Arrowroot
Thickens the sauce to a smooth, glossy consistency without clouding it.

The step that matters

Roast until cooked through. Partridges are small, lean birds that dry out quickly, so checking for doneness at the end of the stated roasting time prevents toughness.

Swap the mace

How well each one fits the dish's main ingredients (mushroom, butter, arrowroot, wine):

  1. Thymefits better
  2. Capersfits better
