Why it works: Onion and lettuce match in chemistry and in kitchens. They rank in the top 8% of all ingredient pairs, and cooks put them together in 3,562 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton or fowl
Provides the main protein; browning and slow simmering make it tender and flavorful.
Curry powder
Supplies the main spice flavor and aroma, toasted briefly in the butter.
Onions
Soften and sweeten as they fry, building the body of the sauce.
Apple
Adds acidity and mild sweetness that balance the spices.
Lettuce or cabbage
Breaks down during stewing, adding bulk and thickening the sauce.
Flour
Coats the meat and helps thicken the sauce as it cooks.

The step that matters

Browning the meat evenly. Shaking the pan keeps the coated meat from scorching or sticking unevenly, so it browns without burning. Browning builds savory flavor, and burnt curry powder turns bitter.

Swap the apple

How well each one fits the dish's main ingredients (mutton, flour, butter, onion, lettuce):

  1. Avocadofits better
  2. Coconutfits better
  3. Limefits better
  4. Applethe original

Fit is the average pairing score against mutton, flour, butter, onion, lettuce. Candidates are from the same food group and used in at least 100 recipes.
