What each ingredient does

Mushrooms
Provide the main body and savory flavour of the topping as they soften and release their juices.
Butter
Carries the flavour and helps the mushrooms cook and brown in the pan.
Flour
Thickens the cooking liquid into a sauce once it is browned and combined with the gravy.
Gravy or beef broth
Supplies the liquid that becomes the sauce and adds meaty savoury depth.
Bread
Forms the crisp base that holds the mushroom topping.

The step that matters

Stirring in the flour until lightly browned. Flour needs to cook in fat long enough to lose its raw taste and gain nutty colour, while stirring prevents scorching; adding liquid too early can leave lumps.

Swap the mace

How well each one fits the dish's main ingredients (mushroom, butter, pepper, flour, beef, lemon, bread):

  1. Thymefits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against mushroom, butter, pepper, flour, beef, lemon, bread. Candidates are from the same food group and used in at least 100 recipes.
