Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Spanish chestnuts
Provide the starchy, mildly sweet body that becomes tender when stewed.
Beef or veal gravy
Supplies moisture and savory flavor that the chestnuts absorb as they stew.

The step that matters

Stew gently until tender but unbroken. Vigorous boiling breaks down the starchy chestnut structure, so a gentle simmer over 45 minutes to 1 hour softens them while keeping them whole.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (chestnut, beef, pepper, butter, ham):

  1. Lemonthe original
  2. Figfits about as well
  3. Cherryfits less well
  4. Limefits less well

Fit is the average pairing score against chestnut, beef, pepper, butter, ham. Candidates are from the same food group and used in at least 100 recipes.
