Brioche

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. In a large bowl, combine flour, salt, and sugar.

  2. Add cream (or water) and butter cut into small pieces.

  3. Incorporate 6 eggs one at a time, mixing gently with your fingers until smooth.

  4. If needed, add an extra egg or yolk for moisture, but keep the dough workable.

  5. Once the dough is smooth, spread it out and incorporate the leaven evenly.

  6. Dust a cloth with flour, roll the dough in it, and place it in a pan.

  7. Let it rise overnight in a cool place (or warm in winter).

  8. Knead the dough again in the morning.

  9. Shape into uniform balls, press a thumb into the top to create a hollow.

  10. Brush with egg yolk and place a smaller ball in each hollow.

  11. Glaze with egg yolk and bake in a preheated oven at 400°F (200°C) for 30 minutes or until golden.
