Modern Chicken Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Remove the bones from the chicken joints and season the flesh with salt, cayenne, mace, and nutmeg.

Assemble the pie

  1. Line a pie dish with a thin layer of pastry.

  2. Spread a layer of moistened sausage meat over the pastry.

  3. Place a layer of the seasoned chicken joints on top of the sausage meat.

  4. Continue layering sausage meat and chicken until the dish is full.

Cover and bake

  1. Roll out a cover of pastry about ½ inch thick and secure it at the edges.

  2. Trim any excess pastry and make an incision in the top.

  3. Decorate the incision with pastry leaves and glaze the top with egg yolk.

  4. Bake in a preheated oven at 400°F (200°C) for 1.5 to 2 hours.

  5. If the crust browns too quickly, cover it with a sheet of writing paper.

  6. Serve the pie hot or cold, but cold is preferred.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main meat, whose cooked flesh gives the pie its substance and savoury flavour.
Sausage meat
Adds richness and fat, keeping the layered filling moist as it cooks.
Pastry
Forms the structural case and lid that hold the layered filling together while baking.
Egg yolk
Gives the top crust a glossy, golden browning when brushed on before baking.
Ground nutmeg
Adds warm, aromatic spice flavour to the chicken.
Ground mace
Adds a warm, aromatic spice flavour that complements the chicken and nutmeg.

The step that matters

Covering the crust when it browns too quickly. The pastry sets and browns faster than the thick filling heats through. Covering the top with paper slows browning so the pie cooks through without burning.

Swap the mace

How well each one fits the dish's main ingredients (chicken, pepper, nutmeg, meat, egg):

  1. Thymefits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against chicken, pepper, nutmeg, meat, egg. Candidates are from the same food group and used in at least 100 recipes.
