Ingredients

Directions

The book says “a very gentle oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the pastry

  1. Roll out the short crust pastry thinly and evenly.

  2. Use a large tin cutter to cut out a dozen small sheets.

  3. With two round cutters, cut out rings—one about 1 inch in diameter and the other half that size.

  4. Place the rings on the pastry sheets as shown in the engraving.

  5. Moisten each ring with egg white using a brush before placing it on the pastry.

Bake and fill

  1. Bake in a gentle oven at 300°F (150°C) until crisp and pale.

  2. Fill each section of the pastry with a different color preserve.

  3. Optionally, ice and decorate with white almond paste and food coloring before serving.

  4. Fill with whipped cream just before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Short crust pastry
Forms the crisp, sturdy base and shell for the cakes.
Egg white
Acts as a glue that helps the pastry rings stick to the sheets.
Preserves
Provide sweetness, fruit flavor and color for each filled section.

The step that matters

Bake in a gentle oven until crisp and pale. A gentle heat dries and crisps the pastry evenly without over-browning it. Too hot an oven can darken the edges before the centre sets, and the pastry may puff or warp.

Swap the almond

The recipe marks almond as optional. How well each one fits the dish's main ingredients (egg, apple, cream):

  1. Hazelnutfits about as well
  2. Chestnutfits about as well
  3. Almondthe original
  4. Pecansfits about as well

Fit is the average pairing score against egg, apple, cream. Candidates are from the same food group and used in at least 100 recipes.
