Custard Puddings

Ingredients

Directions

  1. Clean currants and stone raisins carefully.

  2. Finely pound almonds and spices.

  3. Grate the rinds of oranges or lemons, avoiding the bitter part.

  4. Simmer the custard mixture gently to avoid holes on the surface.

  5. Butter a sheet of writing paper and place it between the custard mixture and the cloth before tying it over.

  6. Butter the mould or basin well and fill it completely.

  7. After boiling, let the pudding sit in the mould for 5 minutes before serving to prevent breaking.

  8. Beat the batter well just before pouring it into the mould and place it in water immediately after tying.

  9. Use a moist, thickly floured cloth for boiling and serve the pudding quickly after it's done.
