Why it works: Rhubarb and sugar are a kitchen classic. They rank in the top 18% of all ingredient pairs, and cooks put them together in 1,852 recipes. Both carry 1-penten-3-one, which smells fish, pungent. The science ↓
Rhubarb Isinglass Jelly
Ingredients
Directions
Prepare the juice
Wash and slice the rhubarb without peeling, removing any coarse or discolored parts.
Combine the rhubarb and water in an enamelled stewpan.
Add the sugar.
Boil gently for 20 minutes until the rhubarb is stewed but not thickened.
Strain the mixture through a muslin cloth folded in four to obtain the juice.
Measure 1 ½ pints of the rhubarb juice.
Make the jelly
Heat the measured juice in a clean pan.
Add the isinglass and large lumps of sugar, stirring until the isinglass is fully dissolved.
Boil quickly for a few minutes to remove scum.
Carefully clear the scum off.
Strain the jelly twice through a muslin strainer.
Let it cool before molding.

What each ingredient does
- Rhubarb
- Provides the tart flavour and pink colour, and its pectin-rich pulp gives body to the juice.
- Isinglass
- Fish-derived gelatine that sets the juice into a firm, clear jelly as it cools.
- Sugar
- Sweetens the tart rhubarb and helps balance its acidity in the finished jelly.
The step that matters
Boil quickly to remove scum, then clear it off. Scum formed on the surface would cloud the jelly and spoil its clarity. A brief rolling boil brings it to the top so it can be skimmed off cleanly before the jelly is strained and set.
