What each ingredient does

Eel
Forms the main body of the dish, cooking to a firm, flaky texture when broiled.
Sage leaves
Wrapped around the eel to add a herbal aroma as it cooks.
Butter
Adds richness and fat, helping the eel brown and carry flavour in the sauce.
Lemon juice
Adds acidity that brightens the rich flavour of the eel.
Chili vinegar
Provides sharp acidity and heat in the serving sauce.

The step that matters

Broil gently until browned all over. Eel is fatty and delicate; high heat can dry the outside before the centre cooks, while gentle heat lets fat render and the surface brown evenly.

Swap the white pepper
