What each ingredient does

Olive oil
Carries the heat and adds richness to the onions and rice.
Onions
Soften and brown to add sweetness and savory depth to the filling.
Rice
Absorbs the water and cooking juices, giving the filling its bulk and texture.
Pistachios
Add crunch and a nutty flavor to the filling.
Currants
Add small pockets of sweetness that balance the savory onions.

The step that matters

Let the rice absorb the water fully before stuffing. Rice that still holds free liquid will make the filling wet and loose, and it can leak out of the shells during cooking. Stirring until the moisture is absorbed and cooling slightly helps the filling hold together.
