The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

    Shared aroma: 1-octen-3-one (mushroom, metallic).

    Shared aroma: beta-damascenone (apple, rose).

Sugar and ginger barely smell alike, yet cooks put them together in 14,054 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Candied orange peel
Provides the main flavour and a chewy, sugary body once cooked.
Loaf sugar
Dissolves into a syrup that boils to a candy stage and sets the drops firm as they cool.
Powdered ginger
Adds the spicy aroma and warm flavour that defines the drops.

The step that matters

Boiling to the candy stage. Sugar syrup must reach the right concentration to set firm when cooled. Boiling too briefly leaves drops sticky and soft, while overcooking makes them hard, brittle, or prone to browning and a bitter taste.

Swap the orange

How well each one fits the dish's main ingredients (sugar, ginger):

  1. Lemonfits about as well
  2. Orangethe original
  3. Limefits about as well
  4. Vanillafits about as well

Fit is the average pairing score against sugar, ginger. Candidates are from the same food group and used in at least 100 recipes.
