Why it works: Potato and flour are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 5,355 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Patent Potatoe Composition to Be Used Instead of Yeast

Ingredients

Directions

Prepare the potato base

  1. Boil the potatoes until tender, then crush them until smooth.

  2. While the potatoes are warm, mix in the honey and yeast.

Make the dough

  1. To make bread, combine 3 pints of the potato composition with 1 bushel of flour.

  2. Add warm water to the mixture, using warmer water in winter than in summer.

  3. Use the composition within a few hours of making it.

  4. As soon as the mixture begins to fall, shape the bread and place it in the oven.

What each ingredient does

Potatoes
Provide starch and moisture that give the bread a soft, moist crumb.
Yeast
Produces gas that makes the dough rise and become airy.
Flour
Forms the gluten structure that holds the bread's shape.
Honey
Feeds the yeast and adds a little sweetness and browning.

The step that matters

Shape the bread as the mixture begins to fall. Yeast gas raises the dough, then it starts to collapse as the gas is used up or overproofed. Shaping and baking at the right moment keeps the loaf light rather than dense and flat.

Swap the potato

How well each one fits the dish's main ingredients (honey, flour):

  1. Arrowrootfits better
  2. Parsnipfits better
  3. Shallotfits better
  4. Potatothe original

Fit is the average pairing score against honey, flour. Candidates are from the same food group and used in at least 100 recipes.
