Stewed, Fried, Baked, or Broiled Trout

Ingredients

Directions

Prepare the fish

  1. Melt the butter in a broad stewpan or well‑tinned iron saucepan.

  2. Stir in the flour, mace, cayenne, and nutmeg.

  3. Add the cleaned and dried trout, shaking it in the pan to prevent sticking.

  4. Brown the trout lightly on both sides.

Stew and serve

  1. Pour in the veal stock, add parsley, bay leaf, lemon peel, and salt.

  2. Stew the fish gently for 30 to 45 minutes, or longer if the fish is large.

  3. Remove the trout, skim the fat from the gravy, and strain it hot over the fish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Enriches the gravy with fat and carries the seasonings during browning.
Flour
Thickens the stock into a gravy that clings to the fish.
Veal stock
Forms the liquid in which the trout gently stews, adding savoury body.
Trout
The main fish, which firms and cooks through during gentle stewing.

The step that matters

Stew the fish gently. A gentle simmer cooks the trout through while keeping its flesh moist and intact. Vigorous boiling can toughen the protein and break the fish apart.
