Directions

Prepare the fruit

  1. Stir the raisins and chop them finely with the sour apples or hard acid fruit.

  2. Pound the fruits well and mix in the spices one by one.

Make the sauce

  2. Beat the mixture until well blended, then gradually add vinegar until the sauce reaches a thick cream consistency.

  3. Transfer the sauce into clean bottles.

What each ingredient does

Raisins
Add sweetness and a soft, sticky body that helps bind the chopped fruit into a paste.
Sour apples or hard acid fruit
Supply acidity and pectin, giving the sauce its tang and a thick, spreadable texture.
Coarse brown sugar
Adds sweetness and a molasses-like depth that balances the sharp fruit and heat.
Vinegar
Adds sharp acidity and thins the mixture to a cream consistency while sharpening flavour.

The step that matters

Adding the vinegar gradually. Vinegar thins the paste quickly, so adding it in small amounts while beating lets the cook stop at a thick cream consistency instead of an overly loose sauce.

Swap the raisin

How well each one fits the dish's main ingredients (apple, sugar, ginger, pepper, vinegar):

  1. Mangofits better
  2. Plumfits better
  3. Pearfits better
  4. Raisinthe original

Fit is the average pairing score against apple, sugar, ginger, pepper, vinegar. Candidates are from the same food group and used in at least 100 recipes.
