French Salmi, or Hash of Game

Ingredients

Directions

Prepare the game

  1. Remove skin and fat from the game legs, wings, and breasts.

  2. Bruise the bodies and place them in a clean stewpan with the skin and trimmings.

  3. Add shallots, bay leaf, mace, and peppercorns.

Make the sauce

  1. Pour in the veal gravy or broth and boil briskly until reduced by half.

  2. Strain the gravy, pressing the bones to extract flavor, and skim off the fat.

  3. Add cayenne and lemon juice, then heat the game gradually without boiling.

Serve

  1. Arrange slices of fried bread around a dish and place the game in the center.

  2. Bring the sauce to a boil and pour it over the game.

What each ingredient does

Underdressed or half-roasted game
Provides the main meat and flavor, which is gently reheated in the sauce.
Veal gravy or strong broth
Forms the body of the sauce, and reducing it concentrates its flavor.
Shallots
Add a mild sweetness and aromatic depth to the sauce as it simmers.
Dry white wine
Optional; adds acidity and aromatic complexity to the sauce.

The step that matters

Heat the game gradually without boiling. Boiling toughens meat proteins and makes lean game dry and stringy, so gentle heating keeps it tender and juicy.

Swap the mace

How well each one fits the dish's main ingredients (shallot, veal, pepper, lemon, bread, white wine):

  1. Parsleyfits better
  2. Thymefits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against shallot, veal, pepper, lemon, bread, white wine. Candidates are from the same food group and used in at least 100 recipes.
