Ingredients

Directions

The book says “a brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. In a frying pan, melt the butter.

  3. Add the eggs and stir until fully absorbed.

  4. When the underside is set, turn the omelet into a well-buttered dish.

  5. Optionally, spread apricot marmalade in the baking dish before adding the omelet.

Bake and serve

  1. Bake for 5 to 10 minutes.

  2. Serve immediately after removing from the oven.

  3. If desired, sift sugar over the omelet quickly before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set into the structure of the omelet as they cook and firm up.
Butter
Adds richness and helps keep the omelet from sticking to the pan and dish.
Sugar
Adds sweetness and helps the top brown lightly in the oven.

The step that matters

Turning the omelet into the dish. The underside must be set before turning, or the eggs will break apart and the omelet will not hold together. Pour it into a well-buttered dish so it releases cleanly and bakes evenly.

Swap the apricot

The recipe marks apricot as optional. How well each one fits the dish's main ingredients (egg, sugar, lemon, butter):

  1. Vanillafits better
  2. Orangefits better
  3. Raspberryfits better
  4. Apricotthe original

Fit is the average pairing score against egg, sugar, lemon, butter. Candidates are from the same food group and used in at least 100 recipes.
