Fore-Quarter of Lamb

Ingredients

Directions

  1. Separate the shoulder from the ribs using a carving knife held horizontally.

  2. Avoid making a broad shoulder flap to keep the ribs intact.

  3. Squeeze lemon or Seville orange juice over the separated parts and sprinkle with coarse sea salt.

  4. Press the parts together gently to release more juice, or add butter if needed.

  5. Separate the gristles of the breast from the ribs.
