Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold veal
Provides the meat for the ragout, cut into cutlets that hold their shape while simmering.
Fresh butter
Adds richness and helps the flour brown and form a smooth thickened sauce.
Flour
Thickens the sauce and helps the cutlets brown lightly in the pan.
Onion
Contributes savory aroma and depth to the gravy made from the veal scraps.

The step that matters

Thicken the sauce with flour mixed with butter until smooth. Flour added directly to hot liquid can clump; mixing it with butter first forms a paste that disperses evenly, so the sauce thickens smoothly as starch granules swell.

Swap the mace

How well each one fits the dish's main ingredients (veal, butter, flour, onion, turnip, carrot, pepper):

  1. Parsleyfits better
  2. Celeryfits better
  3. Thymefits better
  4. Macethe original

Fit is the average pairing score against veal, butter, flour, onion, turnip, carrot, pepper. Candidates are from the same food group and used in at least 100 recipes.
