What each ingredient does

Eggs
Bind the batter and add structure and richness to the cooked pancakes.
All-purpose flour
Provides the starch and gluten that give the pancakes their body.
Milk
Hydrates the flour and sets the batter's thickness and moisture.
Sugar
Adds sweetness and helps the surface brown lightly in the pan.
Butter
Adds fat for frying, flavour, and golden browning on the pancake surface.

The step that matters

Heat the pan until the butter froths before pouring the batter. If the pan is too cool, the batter spreads unevenly and absorbs fat, producing greasy, pale pancakes; a hot, buttered surface sets the underside quickly for even browning.

Swap the ginger

How well each one fits the dish's main ingredients (egg, flour, sugar, nutmeg, milk, butter, lemon):

  1. Cinnamonfits better
  2. Cardamomfits better
  3. Parsleyfits better
  4. Gingerthe original

Fit is the average pairing score against egg, flour, sugar, nutmeg, milk, butter, lemon. Candidates are from the same food group and used in at least 100 recipes.
